With Sugar Ray's Bake Shop, a Cupcake Legend Is Created

By Pamela Sosnowski

As most people are aware, Sugar Ray Leonard is a boxing legend. In Plano, another Sugar Ray is becoming a legend for her delectable cupcakes made with natural ingredients and custom toppings. Rachel Barbaro Arrieta, whose nickname is Ray, is the owner of Sugar Ray's Bake Shop, which has become a hit with customers since opening four years ago on Preston Road in Plano. The award-winning bakery focuses on creating cupcakes and macarons in a variety of flavors.

"We have remained the local go-to for baked goods since we opened and I think that is solely due to our amazing product and the amazing staff I have here," affirmed Arrieta. "We come to work everyday with YOU in mind, trying to figure out something new and exciting that will brighten someone's day."

Before launching her own bakery, Arrieta grew up with a passion for baking and tasting her own creations. She earned a bachelor's degree in restaurant, hotel, and institutional management from Texas Tech University in 2010 and knew she would pursue a career in food. The food business can be competitive, so Arrieta set an intention for her bakery by keeping a positive mindset and goals in mind.

"Since I opened my shop four years ago I have always had the mindset that I am going to create baked goods that are better than anyone else's and I think to be successful you really have to have that mindset," she said. "My cupcakes and macarons are baked from scratch daily; I start every morning with fresh batters to serve that day. I think that is just one way in which I am different from my many competitors around this area."

She also created her own base batter recipes through trial and error and her shop now lists 39 cupcake flavors among the regulars, not including seasonal favorites. Some of these include banana cream pie, chocolate marshmallow cream, caramel apple, and orange dreamsicle while macarons are available in pistachio, coconut cream, blackberry, mint chocolate, and over a dozen more flavors. Arrieta says she is more than open to new flavor suggestions from her customers, and she and her team are always experimenting with new recipes which is another reason why her fans loves returning to her shop.

The frostings and carefully chosen toppings that Arrieta adorns her cupcakes with add the finishing touches that truly separate her product from the ones typically found in a grocery store. Sugar Ray's Bake Shop also makes custom cakes for birthdays, weddings, and other occasions.

Arrieta is involved in the local community, donating 100 percent of all tips she receives to various local charities throughout the year. All veterans and active military personnel are entitled to one fee cupcake or macaron each time they enter the shop. For Arrieta, nothing makes her feel better than seeing how happy people are when they taste one of her creations.

"I cannot say enough how much I love my job," she said. "I started this company out of my parent's house and to get to watch my dream unfold and grow is the best thing anyone can ask for! I get to come to work and bake cupcakes for a living; how could anyone not love it?"
