Royal Catering Puts a Personalized Touch in Event Planning

Variety and taste are key when it comes to picking a caterer. At Royal Catering in Richardson, Texas, clients receive both. Operating exclusively in catering and not as part of a restaurant or chain means this business is dedicated solely to staffing events. With dozens of distinct buffet choices, tailored meal packages, and specialty menus, Royal Catering puts on displays and creates fresh flavors that match or rival even the most prominent caterers in town.

"With our clients typically ordering a day or more in advance, we are able to get only the best and freshest food items to prepare for each event," owner Alan Sweitzer said. "Unlike other providers who [usually] just drop off food, at Royal we provide a complete catering experience."

When catering large group meetings, the most pervasive challenge is in developing food items that are not only delicious but that also have a broad appeal. To satisfy this mass demand, Royal has adapted by deftly accommodating growing dietary needs such as vegetarianism, veganism, and gluten-free. There is also an increased demand for heart healthy and environmentally conscious food choices. Sweitzer is good at recognizing these trends and designs his menus accordingly.

"This is a very [exciting] business [that] provides constant challenges to continually improve our products and services for our clients," Sweitzer said. "Often times, challenges lead to exciting new products being developed."

Their growing menu reflects these healthier trends by including items like the grilled vegan Ratatouille boats, zucchini stuffed with eggplant, tomatoes, onion, and mozzarella, the vegetable kebobs, and the spinach and cheese stuffed Portobello mushroom caps.

Of course, there is no shortage of more traditional dinner options like the Texas ranch barbecue buffet which is particularly popular. Tender, delicious barbecue meats accompanied by proprietary sauce blends are a surefire way to satisfy a group of Texas guests, for example. Most buffet packages include the classic beef brisket, sausage, chicken breast, and pulled pork and certainly signature style pork ribs.

The seafood selection at Royal Catering is influenced by southern style cooking, featuring such favorites as fried, grilled or blackened catfish and crusted tilapia. And last but not least, the Tex-Mex menu embraces homemade style fajitas, enchiladas, and quesadillas made with the choicest ingredients and based on generational recipes. Sweitzer likes to keep most of his dishes rooted in local and traditional recipes and ingredients.

"It is nice providing a product that people really get excited about," Sweitzer said. "When one of our vans pulls up to your office, school or home, you can count on a great time."
