It's a Wrap at Unleavened, Where They Give a Fresh Take on the Classics

By S. Mathur

Healthy food can be delicious. Fans of Unleavened Fresh Kitchen will certainly agree that the healthy salads and wraps are a good alternative to a burger or pizza. Unleavened didn't start out to compete with fast food, says Founder and Co-Owner Scott Piland.

"Our main goal, when creating the Unleavened brand, was to create a place for a convenient meal everyone can feel good about. It was not our goal to squarely target the fast food industry. However, with the speed of our service, quality of our food, and price point, we do attract folks seeking an alternative to fast food."

The healthy combinations can be served as salads or wraps. Popular choices include the Acai Bowl, the Weekender Wrap, and the Seaside Green, made with skinny tuna salad. The combinations are balanced for taste and nutrition. For instance, the Weekender, with buttermilk fried chicken, pepper bacon, lettuce, tomato, shaved carrot, green onion, Boursin spread and ranch dressing, or the Farmstead with portobello, arugula, mache, cherry peppers, grilled zucchini, pickled ohms feta, road red eggplant and green goddess dressing, carefully balance flavors and food groups.

Another favorite combination is the West Coast with corn starch fried shrimp, mache, iceberg lettuce, green onion, cilantro, shaved carrot, spicy avocado, all finished off with Sweet Thai Chili Aioli. Complements include soups, chorizo, and quinoa. House-made dips like hummus, avocado and roasted eggplant have their own fan following. For the early birds, there are delicious breakfast options, served with potato hash and fresh fruit.

The quality and taste have made Unleavened a popular lunch spot. There's even a story about a judge in the nearby courthouse recommending it to jurors in need of a sustaining meal to get them through the afternoon. Overall, the food at Unleavened fits in well with the trend towards healthy eating, and that may be reason why it has been such an instantaneous hit. Located in the historic and trendy downtown Lakewood neighborhood, it is easily accessible.

Piland feels that, "With the availability of so much information, the population is becoming more aware of the impact of what they are consuming on a daily basis. This is true of the foods they eat, the products they use, and the experiences they seek. This certainly plays a role in the popularity of our brand. Customers seek out Unleavened for its reputation in the market for freshness and craveability, attentive service, and the culinary adventure in our ingredients and menu offerings. We are humbled by the overwhelming support and following we have received in such a short time."

Unleavened connects to the community in a number of ways. The "Here For U" program helps local fundraising efforts. The program also promotes healthy eating for kids, and fund raises for veterans in the community.

Here's what a regular customer has to say about Unleavened: "This place is what a small local restaurant is supposed to be like, good portions, tasty product and courteous staff. I highly recommend The Epic, Southwestern and whatever is their special of the day."
