Hello Taco Keeps It Authentic In Texas

By Jake Levin

Inspired by the idea for a made-from-scratch, authentic Mexican quick food concept, Hello Taco is a burgeoning business located in Spring, Texas. Owner Susan S. Ocampo said that while the restaurant sells more than just tacos, those are indeed the gold medal item.

"Our tacos are definitely special," she said. "We start with the homemade tortilla dough. We prepare our dough from scratch every morning. We make the tortillas in front of you when you order so they are fresh and piping hot."

The attention to detail goes beyond just the shell of the taco, of course. Ocampo said that all meats, beef, chicken, pork, fish, etc, are marinated for 12 hours, while all other toppings, such as salsa and salads, are prepared fresh daily.

That goes triple for guacamole, which is made fresh three times per day.

"Our tacos are built your way so you can fill them with your favorite toppings," she said.

Some signature dishes include the Three Tacos Your Way option, as well as shrimp tacos. All dishes are made from scratch, with the use of lard strictly taboo. Nothing is fried, and don't even think about a microwave.

"[It's] just fresh, high quality food made with the utmost care," Ocampo said.

There are many regulars at Hello Taco, Ocampo said, whose orders and names are remembered upon their visits.

Yelp, Zomato and Trip Advisor are among the websites where the business is reviewed, with many positive comments.

"Love Hello Taco! Their fresh tortillas are the best. I like the carnitas and I've never had pork sooooo tasty anywhere else! Their salsas are good and all the fixins are fresh! Highly recommend!" a Yelp reviewer said.

A Facebook reviewer said, "Every time I walk in, the smell of the food brings back memories of parties at my grandma's house with everyone having fun. Excellent service, fantastic food, fresh and speedy food prep. I could go on about how outstanding this place is. The shrimp burrito is the meaning of life y'all. This place is truly a gem!!"
