Ellen's Café Brings Strong Southern Roots to Old Town Spring

By Elizabeth R. Elstien

Taking over Ellen's Café less than one year ago in May 2015, wife and husband co-owners Jessica and Matthew Lynn are poised to take this already popular Spring restaurant to the next level. With strong Southern roots, this pair brings 30 years of combined restaurant experience and that famed Southern hospitality to the table.

Why did they buy this particular café? With experience gained from working famous restaurants in such places as New York and Santa Fe, as well as Houston, the couple had dreams of restaurant ownership and purchased the business after seven long years of searching for just the right spot. Jessica Lynn describes the experience, "We both wanted to work together, and this was a turnkey restaurant that we could grow and change into what we wanted. It has a strong following and well-crafted menu that we can only make better."

Ellen's Café definitely has a solid menu of salads, sandwiches and desserts, often with a slight twist on the classics. Soups, fruit and others sides complete the food menu. Nothing pretentious about those items, but I'll bet you've never had a chef's salad as a sandwich. What really sets them apart is the quality of their food and generous portions sizes. Lynn says, "We find it very important to use organic and local when it's available and financially feasible." Dietary restrictions? Gluten-free, vegetarian and vegan menu options are offered.

Just as important as the food, is the atmosphere. You'll feel right at home with the friendly and knowledgeable staff. The bright atmosphere with its yellow and white walls and colorful blue-green plaid tablecloths just adds to the cheerful décor. If you don't want to eat in, you can order from the "Take Home Today" menu with its five quiche choices, fruit cobblers, pies, cakes or three types of salads to feed the family or take to a party.

This restauranteur couple were trained at the famed Culinary Institute of America in New York and have extensive experience in the food and hospitality industry. "Chef Matthew's cooking style is grounded in French technique with Louisiana and Santa Fe influences," explains Lynn. Not only is Lynn the general manager, she has used her pastry expertise to "grow our fresh fudge offerings from 12 to 21 flavors of which 13 are only available at Ellen's."

"Get it fresh at Ellen's" reads the slogan and many do just that. A lot of events are held at Ellen's Café from baby and bridal showers to parties, luncheons and business meetings. "Our location is great," Lynn tells us. "There is plenty of parking in the lot behind the café and great shopping in our area boutiques before or after your event."
